Ingredients:

Optional Mix-Ins: 1/4 cup white chocolate chips, 2 scoops vanilla or plain protein powder, 1/2 cup pistachios, walnuts, or your favorite nuts!

Baking Equipment:

Instructions:

  1. Preheat the Oven & Prep the Baking Sheet: Preheat the oven to 350°F and position a rack in the center. Line a baking sheet with parchment paper and set aside.
  2. Mix the Dry Ingredients:  In a large mixing bowl, combine the oats, pecans, coconut flakes, cinnamon, and sea salt.
  3. Combine the Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, butter, maple syrup, vanilla extract, and ube extract until smooth.
  4. Mix Everything Together: Pour the wet mixture over the dry ingredients and stir until fully coated.
  5. Fold in the Chocolate & Mix-Ins: Gently fold in the chocolate chunks (and any additional mix-ins) until evenly distributed.
  6. Bake the Granola: Spread the granola onto the prepared baking sheet in an even, compact layer. Press down firmly with a spatula or the back of a measuring cup to help create crunchy clusters.

    Bake for 20-25 minutes or until golden brown, rotating the pan halfway through for even crisping. Do not stir during baking—this keeps the clusters intact.
  7. Cool Completely Before Breaking Into Clusters: Let the granola cool completely on the pan without touching it. Once fully cooled, break into crunchy clusters and enjoy!

Store in an airtight container or reusable bag.
