Serving Size: 18
Prep 10 minutes | Cook: 20 minutes | Total: 30 minutes |
Ingredients:
- 3 cups old-fashioned oats
- 1/2 cup chopped pecans
- 1/4 cup unsweetened coconut flakes
- 1 teaspoon cinnamon
- 1 teaspoon flakey sea salt
- 1/4 cup coconut oil, melted and slightly cooled
- 1/4 cup unsalted butter, melted and slightly cooled
- 1/2 cup pure maple syrup
- 1 tablespoon pure vanilla extract
- 1 tablespoon ube extract
- 1 cup chocolate chunks
Optional Mix-Ins: 1/4 cup white chocolate chips, 2 scoops vanilla or plain protein powder, 1/2 cup pistachios, walnuts, or your favorite nuts!
Baking Equipment:
- 1/4 baking sheet
- 1 large mixing bowl
- 1 medium microwave-safe bowl
- Parchment paper
- Spatula
Instructions:
- Preheat the Oven & Prep the Baking Sheet: Preheat the oven to 350°F and position a rack in the center. Line a baking sheet with parchment paper and set aside.
- Mix the Dry Ingredients: In a large mixing bowl, combine the oats, pecans, coconut flakes, cinnamon, and sea salt.
- Combine the Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, butter, maple syrup, vanilla extract, and ube extract until smooth.
- Mix Everything Together: Pour the wet mixture over the dry ingredients and stir until fully coated.
- Fold in the Chocolate & Mix-Ins: Gently fold in the chocolate chunks (and any additional mix-ins) until evenly distributed.
- Bake the Granola: Spread the granola onto the prepared baking sheet in an even, compact layer. Press down firmly with a spatula or the back of a measuring cup to help create crunchy clusters.
Bake for 20-25 minutes or until golden brown, rotating the pan halfway through for even crisping. Do not stir during baking—this keeps the clusters intact. - Cool Completely Before Breaking Into Clusters: Let the granola cool completely on the pan without touching it. Once fully cooled, break into crunchy clusters and enjoy!
Store in an airtight container or reusable bag.
